Latin Style Roast Chicken

Cooking a whole chicken is one of those things that can be intimidating if you have never made one before. Here you are staring at this bird wondering what special skills and complicated methods you will need to use to cook this thing. But in actuality, roasting a whole chicken couldn’t be simpler! Essentially it’s just two steps: 1. season 2. throw it in the oven. That’s it!

The key to really good roast chicken is making sure to season it liberally and to not dry it out. Once you get the hang of it you can make your roast chicken plenty of different ways by switching up the seasonings.

The sazon, garlic, oregano and cumin is what makes this version Latin style. This is the way my mom always made chicken growing up and how I prepare it for my family. I think you’ll love the bold flavor. No bland chicken here!

Latin Style Roast Chicken

Serves: 4-6 Cooking Time: 1 hour 30 minutes

Ingredients

  • 1 4-6 lb whole chicken
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Black pepper
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 1 Sazon packet
  • 1 tablespoon Olive oil

Instructions

Preheat oven to 350 degrees F.

Remove giblets and neck from chicken cavity if included (not all store bought chickens will have this).

Add all seasonings and sazon packet into a small bowl to make a spice mix.

Place chicken breast side up in roasting pan. Generously season chicken all over the outside and inside the cavity with spice mix. Add olive oil and rub into the outside of the chicken.

Tuck the wings under the body and tie legs together with kitchen twine.

Roast uncovered for 1 ½ hours, or until juices run clear. Check at the one hour mark for doneness.

Once done let rest for 20 minutes. Carve before serving and enjoy!
