Happy Humpday. No exclamation point. I don’t know about you, but I am dragging today. Let’s talk about something exciting, shall we? Okay!
No, not the election. No, not Kim Kardashian…chili! Let’s talk about chili.
So, as I’ve mentioned before I love soups and stews and all their cousins, and chili is not exception. (Wait…is chili considered a stew?). This is a no fuss version that uses ground turkey (you could use beef or chicken if you prefer), three kinds of beans and the usual suspects of tomato sauce and broth. I love this version because its simple to make on a weekend afternoon to have for lunch, pack up for the week’s meal prep…but most of all…to make delicious game-day concoctions.
Naturally, this chili is perfect on it’s own. Get a bowl an array of toppings and you have a party. My personal favoites are: shredded cheddar cheese, scallions, sour cream and tortilla chips. *insert heart eyes*.
But if you want to kick it up a notch, this chili is even better paired with some of my other favorite things.
At your next big-game get together you could have a chili dog table. Complete with premium hot dogs and all the fixings.
Or…OR…my personal favorite, get you some Checkers brand frozen fries, bake them in the oven, nice and crispy, then top with this piping hot chili. When I say GAME. CHANGER. I’m not kidding. If you come from an area that doesn’t sell Checkers brand, any seasoned frozen fries will do (I pray you can find the Checkers/Rally’s brand though). I promise you, you will not be disappointed. Put these out at your next party and you can forget what game you’re watching, you my friend, will be the real winner.
Game Day Chili

- 1 onion, chopped
- 2 cloves garlic, minced
- 1 lb Ground beef or turkey
- 2 15.5 oz cans of kidney beans or black beans, drained and rinsed
- 1 16oz can of refried beans
- 10 oz can Ro-Tel tomatoes and green chilies
- 1 28oz can crushed tomatoes
- 1 chili seasoning packet (I used McCormick brand)
- 1 tbsp ground cumin
- ½ c beer (any kind you like)
- olive oil
- Toppings (optional):
- Shredded cheddar or reduced fat cheddar
- Sour Cream
- Plain Low-Fat Greek yogurt (alternative to sour cream)
- Olives
- Scallions
- Tortilla chips
- Jalapenos
- Hot sauce
Instructions
Heat a large pot with 1 tablespoon of olive oil over medium heat.
Add onion and garlic and sauté until soft and fragrant but not browned.
Next add ground beef (or turkey) and cook through. Add packet of Chili seasoning and stir the meat until combined.
Now add can of Ro-Tel tomatoes and chilies then stir. Next add crushed tomatoes and half the can of refried beans; stir. Now add cumin and beer. Stir once more and then bring to a boil.
Once it reaches a boil lower heat to low, cover and simmer for 30 minutes. Remove from heat, serve and enjoy!
